Self Care with Blueberry Muffins

For someone previously addicted to sugar, I’ve done a pretty good job of eliminating most of it from my life. But on Sundays I indulge this former habit by eating something sweet with a cup of tea. Regular FPS readers will know that being single and living alone has not stopped my desire for good food. And I spend lots of time in the kitchen cooking for myself. (Who better, I say! ) I’ve adopted a strategy of making big batches of things, then storing them in small portions in the freezer for later. So here’s my latest – blueberry muffins pulled minutes ago from the oven. This is a new recipe and I’m excited to taste one this weekend. Only wishing you could join me!

    Ah, a woman after my own heart … I make batches of banana muffins, then into the freezer they go.

  3. Yum! My freezer is too full at the moment for any batch freezing, but I definitely love the idea. In fact, I’ve been wanting to make a batch of your bolognese sauce for a while now, but I’ve been thwarted by the full freezer. Guess that’s incentive to eat some of the stuff that’s already in there!

      Thanks for the link. When I was visiting my brother in New England, we went to the King Arthur flour “campus” in Vermont. I was so excited to be there. And I bought a great hat that says, “BAKE”

    I definitely need some pointers on freezing. I love cooking in batches and luckily I don’t mind eating the same thing for 3-4 days in a row. But once in a while I have the intention of making a dish to freeze portions (usually something rich that I’d rather not eat several days in a row). However, I always end up getting freezer burn on a good stew or lasagna and end up throwing it all out. What do you do? Just freezer bags or something fancier?

      I use freezer bags and try to get as much as air out of them as possible. I also have some good storage containers. There is some freezer burn, but I just live with it.

    Wendy, I agree that cooking for one’s self is a very fine thing to do (totally in agreement with your “who better”!)

    I love to roast a chicken for myself, save some for meals during the week and the rest in the freezer for meals later on. And I get all the crispy skin I want!)

    When the weather is cooler, I often enjoy making a pot of chicken stock with the leftover carcass and bones. It smells wonderful and I relish having smaller containers of homemade stock in the freezer ready to incorporate into some cooking.

      My freezer could use some chicken stock right now. But I, too, usually have some homemade stock on hand.
