What’s for Dinner

It’s the end of a busy work week, and I’m thinking about dinner. At least for tonight, I’ve reached a saturation point with the takeout places in the neighborhood. And there’s nothing that’s calling to me from the freezer. Part of the pleasure of living alone is that I might just cobble together a meal of olives, cashews, and a hunk of cheese and crackers. And who could stop me. What’s on your table when no one’s looking?

I’ve been trapped in my house for ablmost 5 weeks unable to drive due to knee surgery. In addition, my pain pills have really decreased my appetite. So my meal yesterday (spread over a couple of hours) was a couple of pieces of sliced ham, some Lima beans (love them!) and a bowl of Cheerios. Not sure that this constitutes a balanced diet.

Lol, I go through that too. I can have any dinner I want. Go anywhere I want. Then I stay at home throw together a pasta dish!

Sometimes I’ll eat a can of olives. Or cheese and crackers with pickled veg. When it’s a hot evening, I might have ice cream for dinner. When it’s cold, perhaps a bowl of oatmeal. I LOVE the freedom of not having to plan.

Sliced deli turkey rolled up with mustard and/or mayo. Vegetables dipped into tahini dressing. A Larabar and roasted hazelnuts (those unsalted, roasted Oregon hazelnuts from Trader Joes are a particular weakness of mine).

Yes, Leanne, I agree! The freedom NOT to plan is sublime! Cheese, crackers and wine is my particular favorite. A bunch of almonds, some carrots or a piece of fruit is another. Topped off with an ice cream sandwich. Fun and easy.

Cheese and crackers, or bread and peanut butter, and maybe carrots or other quick fruit/veg. I don’t keep ice cream in because I would be tempted to eat it all the time! But I always have some good chocolate on hand…
