Trying to Find Passion for Root Vegetables

Over the weekend, I savored my last taste of decent ripe tomatoes, when I slow roasted a pint of cherries and tossed them with spaghetti. Now I’m having to come to terms with tomato season being over. As a transitional dish, I cooked a chickpea and eggplant stew. Next step, rutebaga? What’s your favorite winter veg?

    Butternut squash! Ever versatile and easy to use in most everything.

      What’s your favorite way to make butternut squash?

        Roasted, with some garlic and olive oil. Toss with roasted cauliflower, caramelized onions, and sauteed mushrooms…pile on a single pie crust, sprinkle some asiago cheese over the top and bake. Veggie galette! My favorite fall dish.

        Roasted brussels sprouts are tasty as well. Why, oh why, did my mother always boil every vegetable?

    Parsnips! I cut them into matchsticks and roast them in a hot oven with a little olive oil and salt.

    Sweet potatoes! Love them as the foundation of a meal. Roasted Brussels sprouts are a close second.
