How to Eat Your Vegetables

The Farmer’s Market is overloaded with all kinds of beans right now. And lately, I’ve been fixated on marinating barely-cooked string beans in a balsamic vinaigrette. They last for days in the fridge, and they’re oh so good.

    That sounds delicious. I struggle with eating fresh vegetables as I’m a single who can cook but who doesn’t like cooking, eating and cleaning up alone or leftovers more than once. But I may try this recipe!

      At Trader Joe’s, they sell green beans that are already cleaned and trimmed, making it far less fuss. My rule of thumb is 3 parts oil to one part vinegar.
