When I was a kid, my my favorite meal was Chef Boyardi beef raviolis in a can. Now, I shudder to think of it. I’d much rather focus on this spectacular saffron-infused cheese ravioli made by Linda Miller Nicholson. She describes it as “if Super Mario and Minnie Mouse had a baby.”
Funny how our palates have evolved with time (and exposure to really good food!) I was a Beef-a-Roni girl myself but wouldn’t touch the stuff now. If I’m going to ingest the calories and the carbs, they’d better be either nutrient-dense or utterly delicious.
Utterly delicious is my goal post.
