Taking the Pressure Off

For years, I’ve been hearing about the obsession over the Instant Pot, a modern version of the pressure cooker. And finally, a few weeks ago, I succumbed and bought one on sale. For the vessel’s maiden voyage, I’m attempting a recipe for Shrimp Biryani which sounds delicious, and relatively easy. (We’ll see about that.) In order to make the dish, I’m heading to a market that specializes in Indian spices. Amidst a turbulent world, this makes me very happy.

    Let me know how you like your Instant Pot. While I have almost every kitchen gadget/small appliance known to humankind (including TWO ice cream makers), I’m probably not going to invest in one anytime soon. But a good friend of mine loves hers.

    Maybe if my yogurt maker goes kablooie. That’s the function I’m most interested in. I’ve given away two slow cookers and I rarely cook rice, so I’m not sure I can justify getting one.

      One of the reasons I bought one is because my slow cooker (which I use) is ancient and needs replacing. I like that in the Instant Pot, you can brown first in the vessel and then slow cook or pressure cook.
