Though an omnivore, I attend a monthly local Meatless Monday potluck, looking forward to it each month. I’ve met some wonderful people there. We regulars are a small group, but we’ve gotten to know each other more intimately. I relish the gathering and the conversation and the company.
Cherry-sage bread was a hit at the December potluck. In terms of an entree, I made a wonderful heirloom bean and potato cassoulet from Fine Cooking magazine that I served at a luncheon for some mostly vegetarian friends. It was a lot of work and I swore I’d never make it again. Until I tried it. Definitely a weekend project!
I found the 4-qt Dutch oven was just a bit too small, so I cut back on the beans and the potatoes a little bit. I skipped the jalapenos and the parsley.

Thanks for the recipe. It looks delicious (though I’m bit on the fence about kale). Is there a reason you skipped the jalapenos and parsely?
Didn’t have the jalapenos (and didn’t want to buy them just for the recipes). Had the parsley but just forgot it. No other reason!
I was curious, because I love jalapenos and parsley, and wondered if you had a specific reason for omitting them.
