Eternal Question

I’m grateful not to be hosting. My only responsibility is to bring something chocolate and this recipe is fool proof.

We are headed to my sister’s she always hosts Thanksgiving and I host Christmas.

I made super easy corn casserole and I have to say it turned out really well. The Red Pepper Jelly Sauce however was a miss and won’t be served ):

      What’s in the corn casserole?

Wendy, it’s so simple and easy. I got the recipe from Whole Foods years ago when they had cooking classes.

        2 cans whole kernel corn
        2 cans creamed corn
2 packages Jiffy corn muffin mix
        1 16oz container sour cream
        1 cup melted butter

Mix it all together an put in greased casserole dish and bake at 350 uncovered for 45-50 minutes.

I topped mine with Sharp Cheddar cheese. And if it was just for my family I would have added fresh chopped Jalapenos on top 🙂

I hosted two friends for Thanksgiving. It was a fete small on numbers and big on female friendship and camaraderie. I roasted a turkey that came in at 16.54 lbs (I ordered a “small”, but this is a fresh pastured turkey, so small, medium, and large are relative terms–even things like weather patterns can affect the sizes of birds who spend time outdoors!) The timing was pretty close to what I expected and frankly, it was the most beautiful looking roasted turkey I’ve ever made. Flavor was wonderful too.

Friends brought a couple of side dishes (delicious!) and I rounded out the meal with a loaf of homemade bread and some cranberry-orange sauce. Dessert was a homemade apple pie with a combination of Mutsu and my last two Northern Spy apples (so lucky to get some of them this year–not easily found in Indiana). I made two mini pies instead of a full pie, which was perfect. Of course, there was some wine, too!

The three of us cherished the time together and the conversation just flowed. I am very thankful to have such wonderful female friends!
