The ever-classic PB&J
The also ever-classic grilled cheese sandwich
Tuna salad sandwich served with tomato soup (apparently, I really liked sandwiches)
Pancakes and sausage
Spaghetti
Mac & cheese
My mom’s chicken cacciatore
My mom’s stuffed cabbage
Malibu chicken at Sizzler
Cheese pizza
I think my tastes as a kid were pretty typical. And I will admit that I also enjoyed TV dinners, even though they were pretty gross when you think about them (which is probably why I rarely got to have them – Mom put her foot down, lol.)
I am ashamed to say that I know definitively that yes, they do still make ravioli. It’s next to the spaghetti-o’s at the supermarket. (Please don’t judge me – my sister has a 6-year-old grandchild, and that is my excuse for knowing this, lol.)
I didn’t really have a favorite from my childhood but when I was in college the dining hall used to serve chicken patties and tater tots every saturday night and it became a ritual for my friends and I to go down for chicken patty sandwiches topped with bleu cheese dressing and tater tots before we would head out to do what college students in the late 80s did on saturday nights. Somewhere along the way it became comfort food and to this day, if I’ve had a bad week, I’ll get myself some chicken patties and tater tots for saturday night.
I absolutely loved my dad’s pork chops. He usually served them with white rice and green peas. My mother did most of the cooking, but my dad always stepped in when she had to work late. He doesn’t cook much these days, but maybe he’ll consider a daughter’s special request…
My mom’s Spaghetti & Cheese (infinitely better than Mac & Cheese IMHO)…Ms. Behar’s (my camp friend’s mom’s) Chicken & Peaches (still make it now)…Grandma’s Dutch Apple Cake.
My favorite dish was what she called “Hunter’s Chicken”. I think it’s chicken cacciatore, though. She burned a lot of things because she had to build a fire in the wood stove to cook. I think I was around eighteen or so when they moved from the cabin to a place with indoor plumbing. I learned early on to appreciate very simple food, like a piece of toast made in front of the fire with a long, wood handled fork.

That’s a great list. I remember being fond of Raviolis. Not sure they even still make that. I’m sure today I’d find them really disgusting.

They were a highlight of my childhood. No judgment.

Such good comfort food. Have you ever had spicy chicken wings with bleu cheese dressing? Now, I’m getting a craving.
Popcorn and a glass of milk on Sunday nights, settled in with the whole family to watch “The Wonderful World of Disney.”
Remember when we all used to watch the same TV show.

How did your Dad prepare his pork chops?
Salisbury Steak on a TV tray.
The TV tray was a very smart invention. It would come in handy in my living room.

Is chicken with peaches anything like apricot chicken?
Never had Apricot Chicken but my guess is it’s similar. Chicken w/ Peaches is as follows:
1. Dredge boneless chicken breasts in beaten egg and soy sauce (to taste) and then dredge in Italian Style Bread Crumbs.
2. Sautee in olive oil.
3. Bake for 20 minutes at 375 degrees.
4. Open can of sliced peaches w/ syrup (heavy or light to your taste) and empty on chicken. Bake for 20 more minutes.
Voila!

Now that is true rustic cuisine.
