Rummaging around in my freezer, I remembered the Bolognese sauce I’d cooked last month and stowed away for a night like this. I’m so excited. It’s defrosting as I write this. I’ll be serving it over a plate of spaghetti tossed with Parmigiano-Reggiano. My all time favorite meal.

I made Bolognese sauce from your recipe a few months ago, and it was time-consuming but fabulous. I can relate to your excitement about defrosting a frozen serving of it!
I count on the sauce taking 5 hours from start of finish, but most of that time is watching it simmer. I find it an enjoyable way to spend a wintry Sunday. And the results are always worth it.
That sounds delicious. I wish I were better (i.e., more organized) about the freezer, but I’ve got some homemade beef, sun-dried tomato, noodle soup in the freezer for dinner this week!
I often cook big pots of things on Sunday making sure there will be enough for leftovers. I’ve also invested in great freezable containers.
