What’s for Dinner?

Bettina Guber.mushroom

Now that it’s getting dark early, and in California, there’s finally a crispness in the air, I bought kielbasa for one of my favorite cold-weather dishes from Barefoot Contessa, a lentil-sausage soup. This is the time of year that I love cooking big pots of stew or chili on Sundays and loading up the freezer. What are your fall food cravings?

Soups, and stews and anything apple. I’m going to roast a cheese pumpkin tonight so I can have the puree ready for a soup. And I’m already thinking about Thanksgiving’s apple pie (or Dorie Greenspan’s apple cake.

I also start craving Manhattans, Negronis, and sidecar this time of year.

I just made both chili (some went in the freezer) and lentil soup almost exactly like the recipe you provide. Mine used chorizo style lamb sausage, from a local farm.
I also vote for apple anything, and using the ‘warm’ winter spices, e.g., cinnamon, nutmeg etc. is definitely a factor in fall comfort food and makes the house smell great!

I made my grandfather’s beef vegetable soup this weekend: it’s plain American farm cooking, and it’s delicious. It makes me miss him.

      What’s in the soup?

You make a simple stock from water and beef short ribs. Then shred the beef into the stock and add a quart of home-canned tomatoes (a must!), one potato, two carrots, one green pepper, one onion, one bay leaf, lots of pepper and some salt. Simmer until veggies are tender. It’s good the first day, but it’s fabulous on the second and third.

What a great idea for soup! I make curry when the weather turns.
