I’m really surprised at the poll results… I would have thought almost everyone had at least a vegetarian ‘phase.’ I was a vegetarian for many years, more recently have embraced the local food approach including pastured, grass-fed meats, farm eggs, etc. but am tending back toward a more vegetable-based diet these days.
Even for my dogs, who eat a raw meat diet, I find myself wondering how they would fare on a vegetarian diet. What goes around comes around I guess.
I was a vegetarian growing up as my parents kept a vegetarian household. I embraced eating meat as soon as I started eating away from home. And I have had a few periods of sticking to a vegetarian diet. I now eat meat but have to say that I love my vegetables and eat meat-free for a lot of my meals.
Even at my most vegetarian-ish, I always made room for an occasional burger. And if my host cooked meat, I ate it. That said, I was largely vegetarian for many years. It was not only for health reasons (based on then-current nutritional knowledge) but also $$$. As a frugal grad student, beans etc. were my friends.
I do credit my then vegetarianish diet to helping me become a much better (and inventive) cook. Even though I eat quite a bit of meat/poultry now, I also attend a monthly vegetarian potluck where I get a chance to make new friends.
I imagine that carrot might be delicious cooked with a mustardy, vinegary glaze!
I quite like a baked quinoa dish with lots of vegetables and shredded cheese on top (leave off for a vegan version). Haven’t made that in a couple of years though.

Just responded to Leyla about my vegetarian fling back in college. I don’t eat a lot of meat, but wouldn’t want to give it up.

What’s your favorite vegetarian entree?

This is an odd confession. I’ve never eaten quinoa.
I follow a vegan diet, have lots of energy & have not missed a day of work in 19 years.
Never missing work is not a prize I’m interested in winning.
