Over the weekend, without much activity on my social calendar, I took to the kitchen. This is almost always a win-win. Cooking gives me immediate pleasure and I get to eat the results. I tried 3 new recipes, and the one standout was the cream cheese poundcake. It’s so easy and delicious. My knees practically buckled taking the first bite. The Cooks County recipe makes a huge amount and that’s the best news. You can give some away and still have leftovers for the freezer.
Sounds great! I was amused to see in the recipe it calls for “a moderate” amount of sugar” — 3 cups! I pretty much avoid sugar these days, however I DO make exceptions, and this recipe might be worth it.
This is a big capacity cake. 12-14 servings. And I have to say, it didn’t taste that sweet to me.
I love your posts about your cooking. I’m one of those who fret about eating too much fat, sugar, carbs, etc…so I’ve never been one to cook a whole cake just for myself (I’m not to be trusted). But anytime I read your posts, I always remember how much cooking really does feed my soul and I vow to re-think being all or nothing.
In fact, during our last blizzard, I cooked up a bunch of cookies and brownies and walked them over to the shelter next door. I may have to do that with this recipe (saving a little for myself of course).
Following in my father’s footsteps, I was a sugar addict for much of my life. And for some reason, I eventually grew out of it. I rarely have dessert now, but I don’t fret over it when I do. These days, I particularly like a breakfast-y pastry with tea on an occasional weekend morning.
