Parmigiano Reggiano. This is one of my most important staples from Costco, which sells the cheese in huge hunks. Perfect to use with a vegetable peeler. What single food item couldn’t you live without?

One food??? ONE FOOD??? Oh, Wendy, this is tough! But if I had to pick one thing I could not live without, it would be pastured eggs. The basis for custards and ice creams and souffles and sauces and, well, you get the picture. Eggs are such a foundational and structural component of my cooking. And good pastured eggs just TASTE delicious! I frequently taste the raw yolk of my eggs (pastured, organic feed, local) and it’s awesome. If I’m scrambling a couple of eggs for dinner and I lightly beat them in a bowl (with a little half-and-half, salt, and pepper), I’ll scoop up the bits that remain in the bowl with my finger and taste. Kind of like licking out the bowl of cake batter or cookie dough.
In a wonderful restaurant in L.A., at Sunday brunch they serve BLT’s with an oozing fried egg on top. Unbelievably good.
Eggs are truly the perfect food (and such elegant packaging!) – I get mine from a local farm or sometimes from my sister, who has about 40 chickens (but unfortunately does not live close by.) So while maybe not my favorite food (Growing up, I actually hated them), they are definitely the most nutritious, versatile, and indispensable single food item I would say.
That’s interesting. Eats would not have occurred to me.
